What's Cooking

This weeks inspiration is Lola Berry's The Happy Cookbook and my Fruit & Veggie box from Indigo Whispers.

  • Porridge - Blitz an apple, handful of sultanas or raisins then follow the BCB recipe. 
  • Almond Milk - Half batch - 1/2 cup almonds soaked over night, drain and add to blender or thermo with 500ml water, blend for 2 minutes (speed 9 for tm), use nut milk bag to drain. keeps 3-5 days (go by smell). 
  • Almond Nut Butter
  • Miss 5's staple meal... Pumpkin Soup (BCB) except totally changed up lol... roasted pumpkin, sweet potato, celery, no cream
  • Stewed Cinnamon Apples my 3 year old son has a tendency to have a bite of many apples and finish few so i stew them up 
  • Lola Berry's (The Happy Cookbook) Cauliflower Rice with rainbow vegetables - Cauli Rice method then pan fried the rest 
  • Skinnymixers Chicken Thai Green Curry
  • Thermofun's Herbie Chicken & Vego Friends (and have bottled up the stock for soup cooking later)
  • Roasted vegies as requested by miss 5
  • Gnocchi (BCB) but cant stick to a recipe whoops.. half potato/sweet potato & spelt flour then served with sage butter & parmesan cheese
  • Baked Gnocchi (above recipe but baked for 20 mins) then pan tossed with sage butter, spinach, mushrooms & pine nuts
  • Lola Berry's (The Happy Cookbook) Salted Caramel Slice
  • ThermOMG Mint ice cream - real mint flavour (from my garden) and all sorts of awesome!
