These muffins were adapted from the new Sweet Heaven cookbook from Sistermixin.
The kids and I tweak almost every recipe and really just use them a guide based on what ingredients we choose to use and what we have on hand.
The recipe makes 16 cupcake sized muffins or 12 regular sized muffins.
The tweaks we made were as follows:
- SR Flour we use 225gm spelt flour (75g wholemeal & 150g white unbleached) & 3 teaspoons baking powder
- Reduced the sugar to 40g and used coconut sugar
- Omitted the icing as these will be for lunchboxes next week
