Carrot & Apple Loaf

Ingredients

  • 90g apple, peeled, cored and quartered
  • 70g carrot, roughly chopped
  • 1 large egg
  • 75g coconut sugar (or sugar of choice)
  • 60g coconut oil, melted
  • 90g natural greek yoghurt
  • 2 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 150g spelt flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon bi-carb soda
  • pinch of salt

Method

  1. Preheat oven to 180C
  2. Grease and line a loaf tin or for muffins line a muffin tray with patty pans (I like to use silicon ones)
  3. Grate apple & carrot for 5 seconds / speed 5. Set aside.
  4. Add all ingredients up to and including nutmeg (excluding carrot & apple mix) and mix 15 seconds / speed 4.
  5. Add dry ingredients and mix 6 seconds / speed 3. Scrape down sides.
  6. Add grated mix and combine 10 seconds / reverse speed 3.
  7. Pour/spoon the mixture into the loaf tin or patty pans and bake loaf for 45-50 mins or til golden or cupcakes 15-20 mins or til golden.
  8. Allow to cool before turning out.
