For the love of chipotle! <3
It’s been one of those what can I make with the ingredients on hand kind of days so not to waste anything or actually leave the house.
We had the main sorted but needed some sides to go with it. So on a whim I threw together some ingredients and the ranch potatoes were served up.
500g sweet potatoes
2 teaspoons dried parsley
1 teaspoon dried dill
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt flakes (or 1/2 teaspoon fine salt)
2 tablespoons EVOO
Peel and cube (approx 2-3cm cubes) the potatoes.
Add to Thermomix jug and cover will water keeping below the maximum line. Cook 10 mins / Varoma / Speed 1 (For conventional cooking you can steam or par boil).
Pre heat oven to 220c. Drain and allow potatoes to cool then place in an oven proof dish. The dish needs to be big enough for a single layer with some space.
Sprinkle herbs over potatoes and give a stir. Drizzle over oil and stir again.
Add to oven and allow to cook for approximately 45 minutes or until golden. Mid way through cooking give them a stir/turn over a couple times.
Serve with some fresh parsley and season with salt and pepper to taste.
You can use one type of potatoes or even sub for other veggies.
