Xmas Cookalong Part II

Make some, all or none its your call. But here is the ingredients & equipment required for the workshop is as follows (no need for rosemary or lemons as I have in the garden):

Christmas pudding - Quirky Cooking

  • 150g sultanas, 80g dried sour cherries or dried unsweetened cranberries, plus extra for garnish, 100g currants OR 330g mixed dried fruit
  • 30g activated or raw almonds, roughly chopped
  • 200g freshly squeezed orange juice
  • zest of 1 orange
  • 40g blanched almond meal
  • 20g coconut flour
  • 1/4 tsp nutmeg
  • 1/2 tsp mixed spice
  • 1/4 tsp cinnamon
  • 55g tallow or coconut oil
  • 40g apple, peeled & cored
  • 2 eggs
  • 1/4 tsp fine salt
  • 1/4 tsp bicarb soda

  • 130 g dried cherries
  • 130 g currants
  • 130 g blueberries
  • 130 g dried red plums
  • 130 g apricots
  • 1 vanilla bean
  • 1/2 cinnamon stick
  • 1/2 tsp grated ginger
  • 1 tsp ground ginger
  • 1 tsp ground allspice
  • zest of 1 lemon
  • 70 g butter
  • 130 g brown sugar
  • 20 g treacle
  • 2 eggs
  • 70 g Corn Flour
  • 70 g flour
  • 130 g brandy
  • 130 g toasted almonds

Chocolate bliss balls - Sistermixin

  • 100g oats
  • 80g desiccated coconut + extra for rolling
  • 170g Medjool dates
  • 2 tsp vanilla bean paste
  • 1 tblsp rice malt syrup or maple or honey
  • 50g dark chocolate
  • 2 tblsp coconut oil
  • 2 tblsp water (or coconut water)
  • container to store

Chilli cherry ripe - Dani Valent (Recipe Community)

  • 500gms dark choc pieces
  • 130gms sweet or sour cherries
  • 40gms desiccated coconut
  • 2 t chilli flakes or to taste
  • moulds or tray/container to set in

Sesame oregano lavosh - Amy Conley 

  • 11/3 cup plain flour
  • 2 Tb black and white sesame seeds
  • 1 T finely chopped fresh oregano or 1 t dried
  • 1 tsp salt
  • 1/4 extra virgin olive oil
  • 1 tsp sesame oil
  • 1/2 c water

Macadamia Parmesan shortbread wafers - Festive Flavours

  • 70gms aged parmesan
  • 2 sprigs fresh rosemary
  • 70gms roasted salted macadamia nuts
  • 50gms butter
  • 70gms plain flour
  • ground black pepper to taste

Mexican spice mix - Skinnymixers

  • 1 tsp dried chilli flakes (more or less to taste)
  • 1 tsp peppercorns
  • ½ tbsp dried onion powder
  • ½ tbsp dried garlic powder
  • ½ tbsp rock salt
  • 1 tbsp dried oregano flakes
  • 1 tbsp dried mild paprika
  • 1 tbsp dried marjoram
  • 1 tbsp dried ground cumin
  • 1 tbsp dried ground coriander

  • 8 dried chillies
  • 4 garlic cloves
  • 1/2 tsp sea salt
  • 2 tablespoons olive oil
  • 3/4 teaspoon coriander seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 tsp caraway seeds

Vanilla extract - the kitchn

  • 1 cup vodka, gin or white rum
  • 3-5 Vanilla Beans
  • Bottle for storage

  • 130g rock salt (or Himalayan rock salt or Epsom salt)
  • ó tsp vanilla powder
  • 1 tblsp macadamia oil
  • 100g coconut oil
  • Jar for storage

Hot chocolate mix (smilo) - Thermobexta

  • 1 cup Raw cacoa powder
  • 1.5 cup Coconut sugar (or sugar of choice)
  • 2 teaspoon vanilla powder
  • Container for storage
